House Hunting and Chili:

Today is our second day of house hunting so far and I am very excited!

Our rent is up in July so even though that is a way a ways
we are getting a little bit of a head start.
We actually are glad we started early because it is very time
consumingand a huge decision.

So far we have fallen in love with a two story home
about ten minutes from where I work.
It needs some love but that is half the fun!

Yesterday, I went to the gym and did 45 minutes
on the Arc Trainer (my favorite cardio machine)
and fifteen on the bike for a little cool down.

I started using "MyFitnessPal" recently
and it is actually a pretty good app
for keeping up with your workouts and calories.
It will also tell you when you will reach your
goal based on what you ate and how
hard you worked out that day and so far
I should hit my goal right before my friends wedding!

If you have an iPhone just go to your applications and
search MyFitnessPal.com and it should be the
first one to pop up. It is FREE so why not?

At about 9:00 last night Ryan called and
wanted his favorite dinner, which is my
southwestern chili. It really is delicious and the best
part- EASY!

Southwestern Chili {serves 10}
2 lbs. ground turkey
2 packets of taco seasoning
2 cans of chili beans
1 can of pinto beans
1 can of black beans {drained/rinsed}
1 can of corn
1 can of mild Rotel
1 small tub of light sour cream
1 large onion

Saute your onions until they are a caramel brown.
{you will want to used a large deep pot}
Add your turkey and cook well,
then add your 2 packets of taco seasoning.
Once that is completely mixed add
all of your cans draining all except your chili beans.
Turn on high until your chili comes to a simmer,
stirring occsionally.
Turn down to a low-medium and then
add your sour cream.

If this is too thick, you can add a half a cup of hot water.

Add salt, pepper and garlic.
I always stir in a little shredded cheese.

Serve with tortilla chips, a squeeze of lime and more cheese!!
