Taco Salad Night!

Last night we decided to head home after church
to make dinner instead of the usual BWW.

Lately, Ryan and I have been eating a little healthier
since the honeymoon cruise and trip to Baton Rouge.
{This is always a must since there is SO much
wonderful food to be eaten there-and we do.}

So here it is:

1lb ground turkey
1 can black beans (rinsed/drained)
shredded cheese
shredded lettuce
diced jalapenos
Rotel (mild or original)
light sour cream
1 taco seasoning packet
your favorite tortilla chips (ours is Tostitos)

I like to put my Rotel in the blender for a second with a little lime and pepper.
 Brown your turkey and add taco seasoning. {follow directions on pack}
Heat up your beans in a separate pan on low-med.
 Then start layering!!
 Place the shredded lettuce down first to keep the chips from getting too soft.
Add your turkey, beans THEN cheese so it melts.
Sprinkle a few diced jalapenos, add your salsa and a dollop of sour cream.
You can crush a few chips on top for crunch.

{Serves 4-5}
